Gravity Flow Winery

Lynmar Estate has applied the latest research and advances in winemaking to create a winemaker's "dream winery" and barrel aging caves. The multi-level, gravity flow winery is outfitted with the most modern winemaking equipment including double-jacketed fermentation tanks for precise temperature control, a basket press for Pinot Noir and a membrane press for Chardonnay, a complete lab and an oxygen-free bottling line. The caves provide an ideal, stable environment for aging and are accessible directly from the winery structure.

This state of the art winery allows the most gentle treatment of the grapes on their  journey to becoming our ultra-premium wine. The delicate clusters and berries are transferred with a forklift into the tank or press, to avoid pumping. Then, we drain the juice by gravity, connecting hoses from the upper level  tanks to the room underneath. There, the juice settles, before being transferred to the barrels and moved into the cave to age.  Cooling and heating by section in the 9,000 sq. ft  cave allow the winery team to bring the temperatures as low as 52 degrees for long term aging and much higher to encourage native yeast fermentations. more »
